After extraction, several scientists have found that olive oil has a high concentration of oleocanthal, which produces an anti-inflammatory effect with similar effects to ibuprofen, a non-steroidal and a common anti-inflammatory medicine. Four tablespoons of olive oil provide the equivalent of about 10% of the recommended ibuprofen dosage, for pain relief in an adult.

 

Studies also reveal that the balanced and prolonged consumption of small amounts of extra virgin olive oil may be responsible, in part, for the low incidence of heart disease associated with the Mediterranean diet.
